I have a number of goals for 2021 so I thought I would share those. You’re more likely to reach a goal if you tell others about it so I encourage you to do the same.
Goals should be attainable, so naturally, my first one is to get down to my birth weight. That or lose 20 pounds, beggers can’t be choosers. I’m in my 40s, young enough to do something about my weight, old enough to know the consequences will start to creep up if I don’t. I don’t have any health issues keeping me from doing this, so it’s time to lower my sugar intake and put myself as a higher priority. And it is NONE of your business whether or not I woke up January 1 and ate chocolate before doing anything else. This is a marathon, not a sprint, and someone put a rock at the starting line to trip me, so I take no responsibility for that small stumble.
My next goal is to expand the restaurant. I have a plan in my head and things are coming along nicely. The expansion will include new bathrooms, more seating, storage, grill space, and a surprise that has not yet been made public, so stay tuned. As of now, the bathrooms are roughed in, the gas, water, and electric have been run, and it’s about to be drywalled and a ceiling put in. If I can get this done by spring, maybe we can also have some outdoor dining added in this summer.
My third goal is to take care of some personal odds and ends that have loomed on my “maybe some day” list for years. They’re being promoted to the to-do list and will finally get some of my over due attention.
There were some things we planned on doing in 2020 that we ended up not doing because of the pandemic. For example, we had to come home early from our trip and missed out on some of the east coast destinations that were closed like Hershey Park, Six Flags in New Jersey, and Ausable Chasm. The kids have been to all 48 of the continental US except for Vermont, which was planned for August of 2020. So I would like to find a way to get them to Vermont this year, hopefully during a trip to Ausable Chasm this summer. If we’re feeling super lucky, maybe we could somehow squeeze in a stop at either Hershey Park or Six Flags NJ to make up for last year.
